Chillable Reds Normally we associate great red wine with qualities like intensity, age-

worthiness, and mouth-coating richness, chillable red aims for the opposite. In place of chewy tannins and oaky flavors, chillable reds calls for bright acidity, low alcohol levels and a juicy core of fruit. Throw any of these in the fridge an hour or so before serving but don’t over chill. Too cold mutes the aromas and flavors.
